Instant Pot: Greasy Rice


In my home a very common staple is a pot of  greasy rice. Years ago when I was looking for a steel or a non-nonstick rice steamer, I came across the instant pot. This beast has become my most used and beloved gadget. There's several off brands available now, and in my opinion any electric pressure cooker with good reviews is probably a wise investment for anyone looking to eat cheap and clean.



It makes real, unprocessed food easy, fast and mindless. It saves me not only time but also a lot of money because you can process bulk pantry foods like whole oats or dry beans with just the press of a button. 


While "greasy" may not sound appealing to some folks, there's a reason I feel greasy rice is the healthiest way to eat rice, it provides you with nutrition and energy. Without fat and salt, rice is just bland and genuinely vacant of valuable nutrients. Fats, a variety if possible give you vitamins A & K, Fatty acids and functional, sustainable energy. Natural sea salt or himilayan salt provides natural minerals and it helps your body to remain properly hydrated. Fats and salt are essential nutrients that make a simple pot of rice a super, frugal-friendly, healthy food. Pan drippings, leftover meats or bone broth mixed with some fried onions and garlic can really make a meal of this but commonly, this is the recipe I make about three times a week... Or more. 



•3 Cups Long Grain White Rice 

•3 cups of water/ bone broth

• 1 Teaspoon Celtic Sea Salt or Himilayan Salt (fine grind)

• 1 Tablespoon Apple Cider Vinegar (or unseasoned rice vinegar) 

• Fats - About 1/2 cup or a generous soup spoonful each of- lard/bacon grease, coconut oil and butter/ghee. Ideally I always use coconut oil and an animal fat of some variety.  

DIRECTIONS
Place water and/or bone broth in the instant pot bowl with the rice. Place on the lid and shut the valve so that it is not venting. Press "rice" and allow it to cook. When finished carefully release pressure. Add fats, salt and vinegar. Stir to combine and serve warm with pepper. (A drizzle of raw honey makes leftover rice an easy , immediate breakfast.)
