Blonde Rye Brownies (Blondie's)
When I plan to post something, I admit, I'll lose myself in a topic. Brownies come to find out, have a fantastically rich New England history that I didn't even know about!
The original brownie recipe made with cocoa powder first appeared as "Bangor brownies", written by a housewife from Bangor, Maine, in 1904. The first published "brownie" recipe however was more of a Blonde Brownie, or molasses cake. You see where I'm going with this now?
While there are chocoholics, I suppose I'm a bit of a rye-aholic. - I love rye, because nutritionally it's amazing, it tastes great and it ferments so beautifully. - Over the years I've learned where I can bake full on rye, and where I can not. It's textures can be odd, and the flavors can end up having an overwhelming "hippie taste" as the nerd herd calls it. -
This easy recipe for Blondie's is my go to. I love that I can use all whole grains, rye in particular, and reduce the sugar, and I definitely love how quick they are to mix up!
Blonde Rye Brownies (Blondie's)
My boys definitely love anything with chocolate chips, and that's really the easiest way to please a crowd for sure. My personal favorite variation would probably be maple & pecan or cinnamon & apple. The signature ingredient in this recipe is Maine Grains Rye flour. It adds nutrition, flavor and just the right amount of character.
•1/2 cup Butter, Melted
•1 Cup Light Brown Sugar
•1 Egg
•2 Teaspoons Vanilla (or other flavoring)
Dry Ingredients -
•1 1/2 Cups Rye Flour
•3/4 teaspoon Sea Salt
•1/2 Teaspoon Baking Power
+ 2 Cups Chocolate Chips or Mix'ins
-Preheat Oven to 365°F
Grease an 8" x 8" Pan
(You can line it with parchment for prettier brownies, or you can even just use a skillet.)
Stir together butter and sugar. Add the egg and vanilla, stir until the egg is mostly blended in. Add the dry ingredients and combine. Stir in your mix'ins. Spread evenly into your pan and bake for twenty minutes. For my oven, around 25 minutes is on point!
-BAKE FOR 20 to 25 M
NOTE:
My family really loves chocolate chips for a classic cookie bar. - You can add a little bit of orange zest, and/ or cinnamon for familiar flavors, or even pinch in some chai spice for a fun twist. Whatever you do, just enjoy them before they're gone!
If your looking for something beyond the usuals, These are my favorite twists.
Cinnamon- Apple : Use upto one tablespoon of ground cinnamon and one cup of Small diced & peeled apples, and one cup of toasted nuts. To use all fruit, you would want to somewhat dry out the apples in the oven first.
Maple- Pecan: Use toasted pecans and maple extract, about two teaspoons will do the trick. - You can also reduce or elliminate the sugar and use maple sugar.
Reduced Sugar: Around 3/4 Cup of Sucanat or another wholesome sweetener would work here. - Half a cup of maple sugar paired with good fruit makes a sweet treat that is easy to put together.
