Easy Apple Cake (Seasonal Kuchen)
We have eaten a version of this simple cake for many years. This simple fruit kuchen (German for cake) can be made a ton of different ways. We often eat it to celebrate the coming or going of seasons, so using what's fresh fruit wise is fun. You can use a wide variety of flours, and fruits for this recipe.
Fruit Topping- |
Use about half cup of rye or buckwheat, all whole wheat or all Spelt or sifted. - When I use peaches or Blueberries, a little Corn meal is fantastic!!! -
Cake-
1/2 Cup Butter , melted
3/4 Cup Maple Syrup (or honey)
3 Eggs
1 1/2 Cups Flour (Local Spelt, Sifted or AP)
2 Teaspoons Baking Powder
1/2 Teaspoon Sea Salt
1/2 Teaspoon Nutmeg
2-3 Small Apples Sliced or. Diced To Place on Top
+ 2 Tablespoons Turbinado Sugar for sprinkling (optional)
Preheat Oven to 375°F
Prepare a round cake pan with butter or grease.
In a medium bowl combine your butter, syrup and eggs. Beat together until combined mostly. Add the flour, baking powder, sea salt and nutmeg. Stir until smooth. Evenly spread into your cake pan. Top with fruit, you can decorate your fruits to be magnificent, or just toss it on there. Sprinkle with sugar if you'd like, and bake for 30 to 45 minutes , or until golden brown.
