Soaking and Cooking Spelt Berries
There are so many great ways to use whole cooked spelt berries. I make wheat, spelt, rye and oat groats whole to use in a great variety of dishes, from porridge and salads, to stir fries and basically any recipe that calls for “cooked rice.” Once cooled, these grains can be frozen for quick weeknight meals.
Prep Time| 5 Minutes Cooking Time| 4 Hours/20 Minutes
Slow Cooker /Pressure Cooker Recipe
- 1 cups Maine Grains Spelt Berries
- 3 cups Water
- 1 tsp apple cider vinegar (optional)
- 1 tsp Sea salt
Rinse spelt berries under cold running water. Place them in the bowl of your pressure cooker, slow cooker or a medium sized pot. Add water and vinegar, and cover to soak for a few hours, or overnight. After soaking cook in your slow cooker on high for 3-4 hours or until tender to your taste. Be sure to add more water if necessary.- Electric Pressure Cooker - Manual setting and high pressure for 20 minutes.
If you are not soaking your grains, use boiling water and increase cooking times.
