Instant Pot: Scandinavian Christmas Pudding




Christmas Rice Pudding, Risengrød,  or "grut" is a traditional Scandinavian treat typically served on Christmas Eve. A bowl is left out on Christmas Eve to appease the ​Nisse or Tomte, spirits. As the stories go, a forgotten tomte can bring bad luck to the homestead if they are unpleased. 



A single almond is placed in the pot and whomever gets the lucky almond is  said to have the best of luck for the year. Leftovers are a beautiful Christmas supper dessert. This recipe is as easy to make as it gets because the electric pressure cooker does all the work. This grut is made with leftover rice and simple pantry ingredients that I always have on hand. 



This recipe is slightly different from what I typically make, because I usually don't cook with refined sugar. Seeing that I didn't even make an array of cookies this Christmas, I figured a little sugar for breakfast was appropriate. 

• 4-5 Cups Leftover Greasy Rice 
• 1 Can Coconut Milk, Plus Two Cans Of Water 
• 3/4 Cup Organic Cane Sugar 
• Cinnamon, Cardamom or Nutmeg
+ 1 Almond 

Serve with butter, heavy cream, raisins, cranberries, pecans, hazelnuts, or walnuts as desired 

DIRECTIONS
Add the coconut milk , water , sugar and spice into your instant pot. Stir to combine. Press CONGEE. When finished carefully release pressure, stir together and serve warm. (Stirring in heavy cream will make it creamier and richer)


NOTE: For a creamier pudding use two or three cans of coconut milk instead of the coconut milk and water.  You can also just use 5-6 cups of whole organic milk.
