Quick Braised Dandelion Greens 
-with Bacon and Potato

There's no better way to eat dandelion greens than this. Bacon, vinegar, and a pinch of sugar or stevia mellows the bite of the greens and crispy leftover home fries add a creamy, heartiness to the dish. This wholesome, seasonal dish is perfect paired with sausages and eggs, roasted meats or of course it makes a simple snack on its own.

  • Several Cups of Washed Dandelion Greens (4-6 large hand fills) 
  • 1 Small Baking Potato, cleaned and diced into bite sized pieces
  • Diced onion, about 1/3 cup 
  • 2 teaspoons mimced garlic
  • 3 to 4 pieces of bacon , cut into pieces
  • Apple cider vinegar , sea salt and pepper to taste
In a Dutch oven or heavy skillet, saute bacon over medium heat until crispy. Remove from pan, do not discard grease. Fry potatoes in bacon grease, add onion if you'd like. (Stir to prevent burning.) After about 5 minutes, add the greens, your potatoes should be crispy on the outside, somewhat raw is ok. Cover with a tight fitting lid, reduce heat to medium low. Add water or vinegar to prevent scorching if necessary. Your greens will steam in about 5 minutes. As soon as your potatoes are cooked, you're done! Add vinegar, salt and pepper to taste.
